Why I Prefer This Recipe
You can use leftover potatoes for this recipe. It’s the best recipe for trying something new with potatoes.
It doesn’t use too many ingredients. You can make it with just a few ingredients, and the other ingredients depend on your preference.
It doesn’t take much time to make; just a little time, and it’s ready. If you need to make a good dish quickly for guests, there’s no better dish.
Ingredients For Mashed Potato Cakes Recipe
Necessary Ingredients
- 2 cups cold mashed potatoes
- One large egg
- 1/2 to 1 cup panko breadcrumbs
- 1/2 cup grated cheese (any cheese)
- Olive oil or vegetable oil for frying
Optional Additions
- Chopped green onions
- Jalapeños
- Cooked bacon bits
- Fresh herbs (e.g., chives, parsley)
- Onion powder or garlic powder
Gather Ingredients
Before making the dish, you collect all your main ingredients. This makes cooking easier. I always prefer to separate and measure all the ingredients before cooking to focus fully on the cooking process. If you search for ingredients while cooking, your recipe can get messed up.
Combine Ingredients
- Combine the cold mashed potatoes, egg, breadcrumbs, and cheese in a large bowl.
- Blend until all ingredients are well combined. The egg should be fully incorporated, and the cheese should be evenly distributed throughout the mixture.
- If you want to add extra ingredients like herbs or spices, this is the perfect time. Just remember to add chopped herbs for better distribution.
Make Cakes
- The next step is the most important one because this is when the recipe is half-ready. You need to shape the cakes carefully.
- First, put a little oil on both your hands. This will prevent the mixture from sticking to your hands and help you get a perfect shape. Your hands will also stay clean.
- Take a little mixture & use your hands to form a round shape. If you blend the mixture well, it will be very smooth, and you can grab it easily.
- Now, gently flatten the round mix. You must do this gradually; otherwise, it can get messed up. While flattening, pay close attention to its thickness.
- It won’t cook fully if it’s too thick, but if you keep it thin, it will dry out and may break when you start cooking.
Coat with Panko
To prepare for frying the potato cakes, start by getting a clean plate & pouring some additional panko breadcrumbs onto it. Once the breadcrumbs are ready, take each shaped patty & gently press it into the panko on both sides, ensuring it has an even coating.
This coating is important because it creates a crispy & golden exterior during frying. It improves the overall texture and flavor of the cakes. It combines all the panko on each patty to get that nice crunchy and soft potato filling.
Add Oil To the Frying Pan
Take a frying pan and add oil to it. Add enough oil so the patties can fry well; it shouldn’t be too much or too little. Cook the oil on medium to low flame until bubbles start to form. When you see bubbles, the oil is ready, and you can now add the patties.
Fry Patties
Once the oil is hot, carefully add the cakes to the skillet. Only add some cakes at a time, as this will reduce space in the frying pan and can cause the patties to break. You should fry them in 2 to 3 batches, depending on the quantity.
Fry the patties on one side for about 3 minutes until golden brown and crispy. Once one side is crispy, flip them over and fry the other.
How to Serve Mashed Potato Cakes Recipe
- Eggs Benedict Base
To have a fun twist on Eggs Benedict, replace the traditional English muffin with mashed potato cakes. They are a good base for these delicious cakes.
Bake, topping each cake with a poached egg, then pour hollandaise sauce. And, of course, if you like, you can add your favorite toppings too: smoked salmon, sautéed spinach, or anything you want.
- For Breakfast
Breakfast of mashed potato cakes can be a great side dish. Unfortunately, they are not great with just plain jam but go very well with many breakfast foods like eggs, bacon, sausage, or avocado slices.
You can also top them with a spoonful of salsa or a dollop of sour cream to add more flavor. It’ll give your breakfast a great taste.
- Main Vegetarian Dish
Dip the mashed potato cakes with delicious mushroom gravy for a tasty vegetarian main dish. The potato cakes are so crispy, and the creamy sauce is perfect to mix with.
Add a dollop of sour cream, adding a rich and tangy flavor that combines nicely with the gravy—a perfect vegetarian dish for anyone who likes a hearty, flavorsome meal.
Can I Freeze Mashed Potato Cakes Recipe?
Yes, you can freeze it. I prefer to freeze it. If the texture & taste remain the same, why not freeze the recipe you worked so hard to make? When I prepare a dish, I put it in the freezer. But you need to be careful when freezing it.
But keep in mind, Cover it properly and put a plastic sheet between the patties so they don’t stick together. Trust me, by carefully freezing it, you can use it for the long term almost for 3 months.
But I do not recommend keeping them in the refrigerator, because they can spoil. Always use the freezer for storing them. The freezer is the best option, even if you just store them for one day.
