  • 48 pieces mini pepperoni slices (or your choice of toppings)
  • Finely chopped parsley (optional)

Step 1: Preheat Your Oven

The easiest way to preheat your oven is by setting your oven to 220°C. When it is heated to this temperature, make sure to keep it ready for baking.

Step 2: Prepare Potatoes

To start, remove a fork and poke a few times on each potato. As they cook, this will let steam out. Then put the potatoes in the microwave and cook them thoroughly on a high setting before you eat them.

All you have to do is cook them until they’re nice and hot but the shape is still intact. It usually takes around 4 minutes. You can cut one in half with a knife to see if they’re ready.

Step 3: Prepare Skin

Cook each potato in the microwave until they get soft, then set aside. After they are done, carefully cut them in half. Scoop out the insides with a teaspoon without skin damage. For the edges to remain sturdy and so the skin won’t break apart, leave a little bit of potato around the edges.

When you have scooped them out, put the empty skins on a baking tray with the skin side up. They then position them like this to bake evenly & become crispy.

Step 4: Brush & Bake

Once this process is done, brush the inside of the potatoes with olive oil. This will make them crispy when you bake them & give them a nice texture. For flavor, splash a little salt on top. 

It would help if you placed them in a baking tray and put the tray in the microwave for 10 minutes. Wait until they become crispy & the texture turns golden brown; this is the exact texture we want.

Step 5: Fill Potato Skins

Flip them over after baking the potato skins so the sides are scooped and face up. You’ll add your toppings here. Then, put 1.5 teaspoons of pizza sauce into each skin. Next, add cheese & mini pepperoni slices on top. The skins have a classic pizza flavor from this sauce, cheese, and pepperoni combination.

Step 6: A Final Bake

Place the potato skins under the broiler for 3-5 minutes. When referring to an exact oven setting, the broiler is a high-heat setting used to melt the cheese quickly & get it bubbly. 

Watch them for burning & remove them when the cheese is melted & golden. After this, you can add your desired toppings.

You can keep the leftovers potato pizza skin  in an airtight container in the refrigerator. They will not spoil at all for up to 3 days. 

After reheat, when you are ready to eat the leftovers reheat them in the oven at 180°C (350°F). It will warm them through and help them be almost as good as new.
