They were usually served during fancy occasions in european culture, like afternoon teas or cocktail parties. They are elegant and best for events like bridal showers or Mother’s Day, but it ultimately depends on individual taste.

Types of Petit Fours

These unique, cute pasties come in different types. I have made all of these, and you won’t believe it—each mini cake has its flavor and a distinct vibe.

1. Petit Fours Glacés

These are the fancy ones! Petit fours glacés are diminutive cakes that can be iced or glazed and are generally iced with chocolate or fondant. They look super pretty, and they are usually designed in fun ways. There are many, such as vanilla, chocolate, or even fruits; you can choose anything, from lemon to raspberry. It is just great fun to make an impression on any party.

2. Petit Fours Sec

These are crunchy ones! Petit Fours sec consists of baked products such as biscuits or cookies. Try visualizing catchy foods such as macaroons or smooth buttery cookies stuffed with jam or chocolate ganache. They’re less sugary than the glazed ones, so you can have them with tea and bite into them to get that crisp feeling in your mouth.

    • 2 egg yolks
    • 2 teaspoons baking powder

How to Make Petit Fours: A Step-by-Step Guide

Sometimes, while cooking or baking, I’m working on a project, but this project is one that I love because making these mini-sweet cakes is a fun activity. I first tried this on Mother’s Day when my cousin was at my place. 

When she tasted them, she requested that I make them for her engagement, so I’ve tried this recipe several times.

Step 1: Preparation & mixing

Preheat the Oven & Prepare the Pan

First, set your oven to 350°F; this is a very important step for even baking, so don’t skip it. After that, take a 13×9-inch baking pan & grease it well with cooking spray or butter, then dust it with flour & remove the excess. You will appreciate this result when you remove the cake from the pan, as it will not stick.

Mix Dry Ingredients

Mix the flour, baking powder, & salt using a fork in a separate bowl until well blended. It also helps spread the leavening agent throughout the flour so that it works effectively during baking.

Cream Butter and Sugar

Thus, take a large and wide bowl, and with a hand-held mixer, whip the butter until smooth at the bottom and add the granulated sugar. Continue beating on medium speed until the mixture is light and fluffy; typically, it takes about 3-5 minutes. 

Add Eggs

Beat in the eggs, one at a time, with the butter-sugar mixture after each addition. This assists in making sure that one egg is well mixed before the next is added to the mix.

Wet and Dry Ingredients: Mixing

In the same manner, combine different amounts of flour and milk into the batter, beginning with a third of the flour mixture. After each addition, beat at a low speed until combined. Do not overmix the batter because it will produce a super dense cake.

Step 2: Baking the Cake

Slowly fill this baking pan you have greased and dusted with your prepared batter. The spread is done using a spatula to make it smooth on the pan.

Bake

Put into your preheated oven for approximately 25-30 minutes, or until you can insert a toothpick into the middle & have it come out clean or with a little crumb clinging to it.

Cool Completely

When baked, pull the pan out of the oven and allow the bread to cool inside the pan for approximately ten minutes. Then, gently transfer it to a wire rack to cool completely before serving. I once frosted the warm cake, and the result was horrible. Do not judge; I was a beginner then. 😃

Step 3: Cutting the Cake

After this, cut off any excess top of the cake using a sharp knife to get a neat rectangular shape.

Remember that the cake portions should be small squares or rectangles, based on the size of your cake pieces, ranging from 1-2 inches. You can keep cookie cutters for fun shapes, depending on your preference & necessity.

Step 4: Preparing the Icing

Choose Your Coating

Choose fondant or chocolate coatings for your petit fours. I love chocolate coating, but both options are delicious!

Melt Fondant or Chocolate

If you’re using fondant, transfer it into a microwave-safe bowl, melt it quickly, and then mix it up.

When using chocolate, chop it into small pieces to melt evenly throughout the preparation. It’s easiest to do this using a microwave and in small batches (15–30 seconds), turning the mixture over until smooth.

Note: If you are using chocolate, you can add a drop or two of vegetable oil or shortening to the chocolate to help with dipping.

Color Fondant (Optional)

Add food coloring and stir until you achieve the desired color if you are using fondant to make colorful petit fours.

Step 5: Assembly and Decoration

Coat Each Piece

For every square or rectangle of cake, take it and dip it into the melted fondant or chocolate until it is fully immersed. After coating, put each piece on a wire rack so that any excess coating will fall off and make the pieces neat.

Get Creative With Decoration

  • Make extra icing for pouring on the top of the cake.
  • You can now add the sprinkle or the edible glitter to give some glittering accent.
